I have been living on this stuff lately - the Trader Joe's version is pretty good and an easy quick snack with pita chips or Naan bread. Also super delicious with Lamb - especially a Gyro with lots of tomatoes!! This is the kind of thing that's perfect to have in your fridge during summer for an easy no fuss lunch. I put this recipe together today - it's not all together traditional but I think the addition of the lemon and sour cream is an added bonus. If you really want it to be authentic - add a splash of Ouzo!
Tzatziki
Makes about 2 1/2 cups
1/2 English cucumber, seeded
8 oz plain Greek yogurt
8 oz sour cream
2 cloves garlic, minced
2 tbsp fresh dill, chopped fine
1 tsp lemon zest plus 1 tsp juice1 tbsp extra virgin olive oil
Use a box grater to grate the cucumber or pulse in a food processor. Sprinkle it liberally with salt and let stand at room temperature for 30-40 minutes.
Use a piece of cheesecloth or a stack of sturdy paper towels to squeeze the cucumbers so all of the excess moisture is gone.
Combine the remaining ingredients, taste and season with salt & pepper.
Will keep covered in the refrigerator for up to one week.
