Cork & Fork was great tonight - although it was really really tough waiting all of the tables without Katie!! Katie was doing a wine dinner at Roy's so we all pitched in to make it work. All of the girls ( and Matt) did a fabulous job. I know I say this all the time but I really think we have the best staff in the whole wide world.I meant to take pictures of everything but got to busy and forgot=( Next week for sure.
Anyhow - my favorite thing tonight was the Ragin' Cajun Gratin - it was so delicious. It's actually based on an Emeril Legasse Recipe - we even made "the essence of emeril" to put in it ( there were lots of jokes about that, trust me). I've resisted it for years - but it turns out I love Emeril's essence ( insert more jokes here).
I thought I'd put a link to the original recipe here so you can try it.

We made ours without the chicken, and just doubled the sausage & mushrooms. I believe we used kielbasa instead of andouille , and pankote instead of breadcrumbs. YUMMM
Also just wanted to note that tonight was the first night we got to use our new locally grown beefsteak tomatoes from Farmer Joe - and they were AMAZING in the caprese salad. We all said "oh yeah, THAT'S what tomatoes taste like!". Totally delicious, thanks Farmer Joe!
