
Today was the Knife Skills 101 class and it got me thinking about my own favorite knife - the Global G2. It's become kind of an extension of my own hand. Lightweight and razor sharp, but with enough heft to tackle larger jobs. I even use it on smaller items when I can. Julie uses it to fillet fish! Today I did some knifework with some of the other knives during the class and although they work well - I always go back to the G2. Everyone should have a great knife like this!
